Delicious and Healthiest Chocolate

God delivered me from my sugar addiction almost 40 years ago. But I still enjoy something sweet, but it has to be on my terms now. When it comes to protein or chocolate bars found in grocery stores, I am not too impressed. Most of them are not health food at all, and most are high in sugar and other undesirable ingredients.

Real chocolate is quite healthy for you, but when you add dairy and sugar, the health scale falls drastically. Below are several ideas of how to make healthy chocolates, and enjoy them any time of the day. My favorite chocolate bar is not just a treat but a meal – including healthy fats, omega 3, protein, fiber and antioxidants.

Chocolate Bar Recipe

Equipment Needed: None

Ingredients:

  • 1 1/2 cups organic raw cacao powder (personally I use 1 cup cacao and 1/2 carob powder)

  • 3/4 cup chopped organic cacao butter – I like the wafers, they are easier to chop into smaller pieces. When heated, they will melt down to about a 1/2 a cup or so, then add coconut oil so that you end up with approximately 3/4 cup or slightly more of warm melted oil.

  • 1/2 cup organic hemp seeds

  • 1/2 cup organic sprouted and dehydrated buckwheat grouts. This adds a nice crunch and more healthy benefits.

  • 1/2 cup vanilla protein powder

  • 1/2 or 1 cup organic unsweetened shredded coconut (being a coconut lover, I use 1 cup).

  • 1/2 cup organic raisins

  • Optional: if you desire more sweetness, add 2-4 T date paste.

  • Pinch of Himalayan salt, if desired.

  • Optional: a couple scoops of Liyf Essentials!

Preparation Steps:

  1. Using a chef knife, chop the cacao butter chunks or wafers into small pieces so that it melts down faster on low heat. You’ll probably need to add some coconut oil with it so that you get about 3/4 of a cup of liquid oil. I personally use a metal measuring cup and warm over stove top.

  2. Place all dry ingredients in a glass mixing bowl and mix well.

  3. Add cacao butter/coconut oil liquid to bowl and mix together. If mixture is too dry, add more coconut oil in liquid form. If too runny, add cacao powder to thicken.

  4. Spoon ingredients onto plate … using a spatula spread mixture about 1/2 thick and score into bars. You can also use a glass container instead or in addition to using a plate. When using a glass container, I lay parchment paper on bottom and spoon and spread mixture, again about 1/2 thickness. Score into bars. Then place in freezer for an hour.

  5. Take out of freezer and separate bars. Place on a cutting board and cut bars into bite size pieces. Place in a glass container and store in refrigerator.

More Delicious Chocolate Options

Using the basic, easy, simple chocolate recipe, spoon chocolate into small paper cups, or silicon tray and then get creative. Try adding raisins, pecans, walnuts, almonds, goji berries, coconut, cacao nibs, or Buck Crunchies (dehydrated soaked and sprouted buckwheat groats). You could also layer in chocolate, peanut butter, and chocolate … and you’ve got yourself a healthy chocolate peanut butter cup.

- Chocolate Covered Raisins (add organic raisins after chocolate is spooned into mold)
- Nestle’s Crunch Bar (using Buck Crunchies – add after chocolate is spooned into mold)
- Coconut Almond Joy (using unsweetened shredded coconut – add after chocolate is spooned into mold)
- Chocolate Covered Nuts (use organic raw nut of choice - add after chocolate is spooned into mold)
- Chocolate Peanut Butter Cups (Spoon a little chocolate into mold, add peanut butter and another layer of chocolate)

You can use silicon trays and make gourmet looking chocolates, or you can use small paper cups, as pictured above, and though chocolates don’t look the prettiest, they taste sensational.

Basic, Easy, Simple Chocolate Recipe

Ingredients:

  • 1 1/4 cups raw cacao powder (sifted to remove lumps) (Or 3/4 cups cacao and 1/2 cup raw carob powder (sifted to remove lumps).

  • 2 tablespoons pure maple syrup, raw honey, coconut nectar, or date paste. (Note: these are to be at room temperature)

  • Combine 1/4 cup cacao butter and 1/2 cup coconut oil  (carefully warm over stove to a liquid, being careful not to over heat)

  • Optional: 1/4 cup raw cashew butter (my personal choice is Artisana Raw Cashew butter – rich and creamy, which adds a creamy smooth texture to chocolate)

  • 1 1/2 teaspoons of vanilla extract

  • Pinch of Himalayan salt

Note: after mixing all ingredients, if chocolate is a bit thick, add more liquid coconut oil and mix well, so that the chocolate can easily be spooned and poured into individual cups.

Note: if you do not have cacao butter, use more coconut oil in its place, or better yet, use coconut butter in its place. If you use only coconut oil, chocolates will begin to melt in your hands.

Place cups or silicon mold in freezer for an hour, then store in refrigerator and enjoy anytime of the day!
